hubby was complaining to me this morning that we need to start eating more home cooked meals to help us lose weight. he's been doing great with working out and eating a healthy breakfast and lunch. but once we're home we're not consistent with our dinners. we either eat out or eat left overs, sometimes i eat cereal for dinner if i'm not super hungry. i try and cook at least 3 times a week but sometimes that just doesn't happen. last weekend i cooked a couple meals and we've been eating leftovers. well apparently he's tired of that, especially soups and chili.
this morning before i left to work i meant to take something out of the freezer and then "poof" just like that i forgot.
now i don't know what to make tonight?!
any suggestions?
seriously, i need help!

this will be the 4th time this week we cook and actually use all the items we bought at the grocery store. we usually get too lazy and end up tossing stuff out. i know, we're terrible.
so on monday i made chimichurri and i made so much that we've been eating all week and putting in on top of everything. it's soo soo good and i could practically drink it, lol!
tonight i am making tilapia and guess what? i'm dousing it with more chimichurri...mmmmm.
It's taken me a little bit to post about Easter but I guess better late than never. We were invited to my girlfriend Rosie's house for Easter. I made a zucchini casserole and got the kids some baskets. We had a really nice time and the food was excellent. Rosie really outdid herself because she made a lot of food....too much food I thought but nonetheless it was GREAT. Not only did she make ham but she also made macaroni and cheese (from scratch), corn bread, grilled bbq ribs, hot dogs, hot link, her niece made potato salad and my dish was the veggies filled with lots of cheese. The kids searched for eggs later in the evening while the adults enjoyed a cocktail or two. Roxxy scored too, he got a big old duckie from Brandon...do you think it might be a little too big for him? LOL!!!
Good times had by all.
OMG, I am so tired! Seems like all I did yesterday was cleaned and cooked all day long. It's a lot of work but it was certainly worth it. My family didn't come over until around 2:30ish and by this time T and I had already started picking at the appetizers. Dinner was around 4:00 and everything came out very yummy. I ate soo much! What a porker, I know! My aunt and uncle came over to drop off some gifts and they had dinner too. My mom, brothers, Tony and I went to church at 7:00pm and once we returned we had dessert. Almost every time I go to church I get teary eyed so does mom. Don't ask me why. So by the time we got home I was super sleepy but then my girlfriend came over with her kids to drop off our gift so we stayed up talking until around midnight...We got a gift basket with wine and candles, too cute! Doesn't mom look gorgeous? ;)
